What’s so special about the jelly?

Scratch Made stocks is typically jelly like in format. It is traditionally made from a long process of boiling down bones and vegetables with herbs, over a period of time of 4 to 12 hours. The stock is further reduced to intensify flavour and becomes a jelly when chilled.

This underlies the authenticity of Stock Reduction as the jelly format enables us to use real meat/ vegetable extract that retain the characteristic flavours.
