Chicken and Apple Quesadilla 11+

100gMature cheddar cheese Half fat, grated

Preparation

Advance Preparation
Pre heat an oven to 180ºC (350ºF) Gas 4. Slice apples and mix with a little lemon juice to avoid them turning brown

Method
1. Decant the sauce into a jug cover, label and refrigerate if not using immediately. Place 5 of the tortillas on a
lined baking tray.

2. Heat the oil in a suitable sized pan over a medium heat. Add the chicken and stir fry for 2 minutes. Add the
sauce to the chicken, bring to the boil and simmer for 10 minutes.
3. Evenly lay the slices of apple on the 5 prepared tortillas on the tray, top with the chicken and sauce. Sprinkle
over the cheese and place a tortilla on top. Brush with FLORA.
4. Place the baking tray with the quesadillas on in the pre-heated oven for 10 minutes.
5. Slide the quesadilla onto a chopping board and slice in half.

Service Hint
Serve accompanied with beans and coleslaw.

Handy Hint
The quesadilla can be assembled cold and cooked in the oven on a lined baking tray for 20-25 minutes, rather than hot as in this method. They can also be made in a dry frying pan.
Healthy Hint
Added salt is not recommended but if used keep to a minimum . If using oil use unsaturated (olive or sunflower) and reduce the quantity used where possible. This helps to provide a nutritional balanced dish.
