Apricot and Passion Fruit Bavarois

 
 

Ingredients (10 portions)

200mlMeadowland Double – the benefits of double cream without the disadvantages 
100gCaster sugar
108gEgg yolk
4pcGelatine soaked in cold water until soft
60gPassion fruit (flesh and seeds only)
200mlOrange juice
250gDried apricots chopped soaked in hot water for 10 minutes
200mlMeadowland Double – the benefits of double cream without the disadvantages softly whipped 

Preparation

Advanced Preparation.
Lightly grease dariole moulds.

Method.
1. Place the milk and cream into a suitable pan and place over a medium heat, bring to the boil and then remove from the heat.

2. Whisk the eggs and sugar together until thick and pale in colour. Add the milk and cream mixture to the eggs and then return to the pan. Place back onto a medium heat and cook until the mixture coats the back of the spoon. Remove from the heat and add the soaked gelatine stir until dissolved. Pass through a sieve into a suitable bowl and allow to cool whisking a couple of times during this time.

3. Add the passion fruit and orange juice to a pan and place over a medium heat, reduce to 150ml. Pass the passion fruit syrup through a sieve into a clean pan. Add the drained apricots and gently simmer for 5 minutes, place into a blender and puree until smooth, allow to cool.

4. Add the puree to the bavarois base and mix well, fold in the meadowland and then pour the mixture into the prepared moulds. Chill until set.

5. Place the moulds into boiling water for 5 seconds to release bavarois, invert the mould on to the service plate, remove mould. Serve.

Service Hint
Serve the bavarois with CARTE D'OR Mango Coulis.

Handy Hint
The fruit puree can be changed to any fruit puree to deliver different flavoured bavarois.
