Apple Spice Muffins

Preparation
Advance Preparation
Pre heat the oven to 180°C (350°F) gas 4. Prepare 10 muffin cases.
Method
1. Place the flour, oatmeal, baking powder and bicarbonate of soda in a mixing bowl.
2. In a separate bowl whisk together the FLORA and honey to a fluffy texture and whisk in the beaten eggs to a light batter, mix in the yogurt
3. Lightly fold in the yoghurt followed by the remaining ingredients and place into a large piping bag (disposables are best).
4. Three quarters pipe and fill into the muffin cases.
5. Place into the pre heated oven and bake for approximately 20 minutes or until a skewer inserted in the centre of the muffin comes out clean.
Service Hint
Best served warm and ideal for breakfasts continental style. Can be served with Cinnamon Sugar.
Handy Hint
Other fruits can be used instead of the apple and raisins for example apricots and dried cranberries or banana and dries blueberries
Healthy Nutritional Advice
Added salt is not recommended but if used keep to a minimum . If using oil use unsaturated (olive or sunflower) and reduce the quantity used where possible. This helps to provide a nutritional balanced dish.
