Balti Murgh Masala

Preparation
Advanced Preparation.
Warm the serving dishes. Place the chicken and 50g of Madras spice blend paste in a suitable bowl to marinate, season and flavour, mix well. Cover, label and refrigerate overnight.(optional)
Method.
1. Heat the oil in a suitable pan over a medium to high heat. Add the onions and cook until browned.
2. Add the balti spice blend paste and marinated chicken, fry for approximately 5 minutes to cook out the spices and seal the chicken, occasionally adding a little bouillon or water to prevent sticking to the bottom of the pan.
3. Add the mint, half the coriander, tomatoes and spinach, bring back to the boil and cook for a further 5 minutes.
4. Add the water, bring to the boil, reduce to a brisk simmer and cook for 15 - 20minutes or until the chicken is thoroughly cooked and tender and the sauce is of the right flavour and consistency.
5. Serve
Service Hint.
Serve in appropriate warmed dish garnished with chopped coriander. Serve with KNORR USA Long Grain Rice and a selection of KNORR Pataks Pappadums, Naan Breads and Chutneys.
Handy Hint.
For a stronger or milder sauce the paste can be increased or reduced by 50g. As an alternative the sauce can be made separately by removing the protein at step 2, reducing the cooking time to 15 minutes and thickening the sauce by blending with a hand or machine blitzer/blender. Other proteins such as quorn, vegetables or prawns can be used.
Healthy Hint.
Added salt is not recommended but if used keep to a minimum . If using oil use unsaturated (olive or sunflower) and reduce the quantity used where possible. This helps to provide a nutritional balanced dish.
