Beef and Black Bean Stir Fry

Preparation
Advance preparation
Warm the serving dishes. Make up the stock by whisking in 20g paste to 1 litre boiling water. Pre cook the noodles in the stock, drain, place in a bain marie cover and keep hot.
1. Combine the beef, garlic, ginger, lime juice and sugar in a suitable bowl, cover, label and refrigerate for up to 3 hours or as required.
2. Decant the Black Bean Sauce into a saucepan into a measuring jug. If not for immediate use, cover, label and refrigerate until required.
3. Add a little oil to a wok and adjust to a high heat. Fry off the beef and onions a few pieces at a time adding further oil as required.
4. Drain any excess oil from the wok, add a little sherry simmer for a few seconds, add the sauce, bring to the boil and simmer for 2-3 minutes
5. Serve the beef and onions, piping hot, in suitable serving dishes either on a bed of noodles mixed in or served separately.
Handy hint
Serve with a portion of KNORR Giant Prawn Crackers. To keep the noodles moist in the bain marie, add a little hot stock and a little oil.
Nutrition
Added salt is not recommended but if used keep to a minimum . If using oil use unsaturated (olive or sunflower) and reduce the quantity used where possible. This helps to provide a nutritional balanced dish.
