200gSpring onions prepared and chopped
200gRed peppers prepared and sliced
200gCourgette prepared and sliced
300gBean sprouts washed
400gShellfish, prawns cooked cut in half
50gCoriander washed and choppedc
  20 spring roll rice paper wrappers

Preparation

Advance Preparation
Prepare the ingredients as above.

Method
1. In a suitable pan, add the KNORR BLUE DRAGON Create More Sweet & Sour Concentrated Sauce to the water. Mix well, bring to the boil and simmer for 5 minutes. Allow the sauce to cool before covering, labelling and refrigerating ready for use when required.
2. In a suitable bowl mix together the prepared vegetables, prawns, coriander and a third of the Sweet & Sour sauce and mix well.
3. Dip the spring roll wrappers one at a time in warm water and place on a damp tea towel to drain. Allow to dry off slightly.
4. Spoon the mixture evenly between the wrappers and then fold in the sides before rolling each wrapper. Place onto a suitable tray and cover, label and refrigerate until required.
5. Serve each roll cut at an angle in half and serve with the remaining sauce on the side as a dipping sauce.

Service Hint
Serve with prawn crackers and a crisp Asian salad.

Handy Hint
Prawns can be replaced with mixed vegetables, chicken or other meat substitutes.

Healthy Nutritional Advice
Added salt is not recommended but if used keep to a minimum. If using oil use unsaturated (olive or sunflower) and reduce the quantity used where possible. This helps to provide a nutritional balanced dish.
