Mediterranean Chicken parcels

Preparation
Advance Preparation
Warm the service plates.Pre heat an oven to 180ºC (375ºF) gas 4. Cut 10 pieces of foil each about 25cm square. Wash the jacket potatoes.
Method
1. Place potatoes on a baking tray and cook in the pre heated oven, keep hot.
2. Divide the sauce between the 10 foil squares.
3. Place the chicken and green beans on top of the tomato sauce, top with the cheese and basil.
4. Wrap up the foil to form a parcel to seal all edges. Place on a baking tray and cook in the pre-heated oven for 20 minutes or until the chicken is thoroughly cooked.
5. Serve the chicken in the pouch accompanied by the jacket potato topped with cheese and Flora.

Can be served with crusty bread and salad.

Keep added salt to a minimum. This helps to provide a healthy balanced dish.
