Baked Sweet Potato with Coronation chicken Salad

| 1.3 | kg | Sweet potato & baked |
| 1 | kg | Mixed green salad prepared & washed |

Advanced preparation
Pre heat an oven to 180ºC (350ºF) Gas 4
1. Place cooked chicken and apricots in a bowl, blend in mayonnaise and curry sauce, cover, refrigerate and use as required.
2. Place washed & prepared sweet potatoes on a baking tray, cover in foil and bake in the pre heated oven until cooked (approximately 45 minutes).
3. Serve sweet potatoes topped with coronation chicken mix and accompanied by a mixed green salad.
