Pan Fried Fillet of Beef With a Redcurrant infused Jus

30gKNORR PROFESSIONAL Pureed Herbs Garlic  
500mlKNORR Demi Glace Sauce Mix 
100mlKNORR Paste Bouillon Roast Beef 1kg 
30mlSunflower oil
20gRed currant Jelly

Preparation

Warm serving dishes.

Method.
1. Trim beef of any sinew and brush with the garlic paste.

2. Make up the demi glace, mixing in 85g to 1 ltr of boiling water. Cover and place in to a bain marie till required. Make up the bouillon using 20g paste to 1 ltr of boiling water.

3. Heat the oil in a suitable pan to a high heat and fry the beef medallions all over until lightly browned browned. Place inthe pre heated oven and finish cooking as required

4. Deglace the pan with a little bouillon and reduce by half, add the redcurrant jelly, dissolve well and add the demi.

5. Remove the beef from the oven, rest a few minutes, carve and serve centre of plate with accompaniments of choice and the sauce drizzled over or served separately.

Service Hint
Serve with boiled potatoes and steamed glazed vegetables

Handy Hint.
Other types of meat could be used like steak or chicken.

Healthy Hint.
Keep added salt to a minimum. Use an unsaturated oil (olive or sunflower) and reduce the quantity used. This helps to provide a healthy balanced dish.
