Wash and prepare the ingredients
Method.
1. Place all prepared ingredients except the coriander and dressing in a bowl and leave to marinade for a hour in the fridge.
2. To serve add the coriander and the dressing mix well and serve in a large white bowl for buffet service.
Handy Hint.
If you chop the ingredients smaller it makes a great salsa to go with mexican fajita's.
Healthy Hint.
Serve with poached fish and a green salad.
