500gTinned tomatoes chopped
300gFennel , chopped and roasted (optional)

Preparation

Advance Preparation
Warm the serving bowls.

Method
1. Wash and prepare the vegetables. Cover and refrigerate until required for use.

2. Make up the soup as per manufacturers instructions, using 136g mix for 1.7L soup.

3. Add the canned tomatoes and vegetables. Bring back to the boil.

4. Simmer for 5 minutes.

5. Serve in warmed bowls

Handy Hints:
To bulk out the soup, add cooked KNORR Tortelloni al Pesto.
For a change, serve the soup chilled with finely diced mixed peppers and diced cucumber. Drizzle with Olive oil.
If you decide to roast the fennel, toss in 20ml sunflower oil and roast in a pre-heated oven at 180ºC (365ºF) Gas 4, for 20 minutes. Remove, chill, cover and refrigerate until required for use.
