Caramelised Brown Onion Soup

| 250 | ml | Wine, white |
| 150 | ml | Madeira |
| 50 | g | Baguettes sliced |
| 50 | g | Mature cheddar cheese grated |
| Parsley, 10 sprigs for garnish. |
Preparation
Advance Preparation
Warm 10 earthenware soup bowls. Prepare the cheese croutons by lightly grilling the bread both sides, top with cheese and grill till lightly browned.
Method
1. Peel and slice the shallots.
2. Make up the bouillon as per the manufacturers instructions whisking 25g paste into 1ltr of boiling water.
3. Melt the buttery in a thick bottomed pan, raise to a medium to high heat, add the shallots and garlic and cook steadily until they are well browned and caramelised. This will take up to 30 minutes and perhaps more. However this is the critical part of the soup process to maximise flavour.
4. Mix in the flour and cook gently until lightly browned. Gradually mix in the bouillon, wine and Madeuira, bring to the boil. Skim if required.
5. Pour into the pre heated earthenware soup bowls, top with a cheese crouton, a parsley sprig and serve piping hot.
Service/Preparation
This soup can be recreated by using many of the KNORR Bouillon varieties and the flour can be substituted by using KNORR Brown Roux Granules, whisked in at the end of stage 4.
For the crouton KNORR Cheese sauce can be used and flavoured with KNORR Peppercorn Puree.
Healthy Nutritional Advice
Added salt is not recommended but if used keep to a minimum . If using oil use unsaturated (olive or sunflower) and reduce the quantity used where possible. This helps to provide a nutritional balanced dish.
