Chicken Soup with Lemon and Mint

150gOnions Chopped
80gArborio rice
300gChicken breast, skinless
60mlJIF Lemon Juice 250ml 
4gMint chopped

Preparation

Advance Preparation
Make up the chicken stock by whisking 25g of bouillon paste into 1lt of boiling water. Warm serving dishes.

Method

1. Cook the chicken in the KNORR Clear Chicken Bouillon, remove, place in a dish, cover, label and refrigerate until required for use.
2. Decant the stock in to a suitable pan and place over a high heat, bring to the boil. Add the onions and rice and cook until tender.
3. Slice the chicken and add it with the lemon and mint to the bouillon, bring to the boil and simmer for 2 minutes.

4. Serve the soup in the warmed bowls garnished with a sprig of mint and lemon zest.

Handy hint
The flavour can be gently scented by using a variant from the KNORR Puree Herb & Spice range.

Healthy Hint
Keep added salt to a minimum. Use an unsaturated oil (olive or sunflower) and reduce the quantity used. This helps to provide a healthy balanced dish.
