Mint Pea and Crispy Bacon Soup

| 100 | g | Leeks sliced |
| 75 | g | Streaky bacon chopped |
| 0.8 | kg | Frozen peas |
| 50 | ml | COLMAN'S Fresh Garden Mint 2ltr |
Preparation
Advanced Preparation.
Prepare ingredients as above, warm the serving plates.
Method
1. Make up the bouillon as per manufacturers instructions using 25g of paste to 1 litre of boiling water.
2. Heat the buttery over a medium heat in a suitable pan. Add the leeks and bacon and cook without colour for 5minutes until leeks are tender (put some bacon aside for garnish).
3. Bring peas and bouillon to the boil and cook for 5-6 minutes or until peas are tender.
4. Blitz the soup with a hand blender or in a liquidizer until smooth. Pour back into a pan and add the Colman’s Mint Sauce, bring to a simmer.
5. Serve, garnish with bacon & Crème fraiche if desired
Service Hint
Serve with crusty bread and FLORA.
Handy Hint
The bacon can be removed for a vegetarian option also the soup can flavoured with any of the KNORR Pureed Herb and Spice range.
Healthy Hint
Added salt is not recommended but if used keep to a minimum. If using oil use unsaturated (olive or sunflower) and reduce the quantity used where possible. This helps to provide a nutritional balanced dish.
