Wash, prepare and dry the lettuce. Chill the service plates.
1. 1. Place the chicken in a bowl, mix in the garlic paste, cover and refrigerate until required for use.
2. Place the chicken on a baking tray, place in the pre heated oven and cook thoroughly, stirring occasionally, without colouring. Remove, chill rapidly, place in a bowl, cover and refrigerate until required for use.
3. Arrange the lettuce on the paltes or bowls, and further arrange the cooked chicken and croutons as required.
4. Top with shavings of parmesan and serve with the sauce drizzled over or served separately.
Handy hints
For a further touch of authenticity you could add whole anchovies to the dish or a little anchovy sauce mixed into the dressing.
