Set (and enforce) personal hygiene standards

Basic hygiene standards that every kitchen staff should adhere to include:

·       A clean uniform - that should be only used in the kitchen

·       Disposable gloves that are being changed regularly and handwashing at regular intervals

·       Hair tied back if required

·       Short, clean fingernails.

A clean bill of health (i.e. remind your staff of their responsibilities in terms of fitness to work). 

Good practises

Make sure you have all your records up to date. Your suppliers are working hard to avoid any disruption to your food deliveries but make sure you are monitoring the condition of the goods when they come in.

Going back to basics is the best thing we can do at this time so checking your sanitisers contact times when cleaning down and ensuring that your team knows as well.
