Preparation
Advance Preparation
Warm serving bowls. Ensure steamer is on and ready for use, if using oven pre-heat to 180ºC (350ºF) Gas 4. Prepare ingredients as directed. Make up the sauce as per manufacturers instructions.
Method
1. Place all ingredients (apart from coriander) into suitable oven proof dish, mix well ensuring the Korma sauce is thoroughly mixed throughout.
2. Cover with a lid or tin foil, Place into the oven and cook for 30 minutes or until chicken is thoroughly cooked.
3. Remove from the oven and stir well.
4. Serve with chopped coriander sprinkled on top.
Service Hint
Serve with a portion of rice, ideally brown or alternatively a 50:50 mix of brown and white rice. Mixing brown and white rice together will increase fiber and zinc levels in this dish and also make the rice element more palatable for children.
Healthy Dietary Hint
Keep added salt to a minimum. Use an unsaturated oil (olive or sunflower) and reduce the quantity used, or use FLORA. This helps to provide a healthy balanced dish and contributes toward your required folic acid and omega 3 daily intake. Serving a portion of Broccoli with this dish will enhance the calcium content of the dish.
