Preparation

Advance Preparation
Cook selected raw pasta, one minute less, as directed by the manufacturers instuctions. Wash under cold running water, drain, place in a clean container, cover, label and refrigerate if not required for immediate use. Wash and prepare the ingredients as directed.

Method
1. Decant the required amount of sauce into a saucepan or jug, bring to the boil, cover and keep hot in a bain
marie.

2. Heat a pan with a little oil added and sweat onions to translucent, add in the quorn mince, red kidney beans and
peppers and fry, stirring regularly, for 5 mins or until all ingredients are combined and thoroughly cooked.

3. Add the sauce, bring to the boil and simmer for 2 minutes.

4. For service, refresh the pre cooked pasta in boiling water for 1 minute, drain and serve in warmed bowl topped
with the cooked sauce.

Service Hint
Can be served with crusty wholemeal bread and a portion of salad.

Handy Hint
For 1kg of cooked pasta you will require approximately 500g of raw pasta. A little Olive or vegetable oil added to the washed cooked pasta will prevent "sticking". The quorn mince can be substituted for other vegetarian varieties.

Healthy Nutritional Advice
Added salt is not recommended but if used keep to a minimum . If using oil use unsaturated (olive or sunflower) and reduce the quantity used where possible. This helps to provide a nutritional balanced dish.
