Preparation

Advance Preparation
Wash and prepare ingredients as directed. Pre-heat a grill for the vegetables. Pre-heat an oven at 180ºC (375ºF) gas 5

Method:
1. Place the vegetables into a suitable bowl add the olive oil and mix well.

2. Place the vegetables onto a suitable baking tray and grill until lightly browned.

3. Place the vegetables back into a mixing bowl and add the chicken and mozzarella.
4. Add the KNORR Tomato and basil sauce, parsley and lemon juice and lightly mix. Cover and refrigerate until required.
5. Place cooked Jacket Potato onto a suitable plate, cut in half lengthways, fill with the chicken salad mixture.
Service Hint
Serve with fresh steamed vegetables or a crisp green salad.
The filling can be served hot by thoroughly cooking either in a saucepan or baked in the oven and adding the cheese at the end as a garnish.

Handy hint
Multiple portions can be made in advance for ease of service.
For quicker cooking prepare jacket potatoes by wrapping in tin foil & baking in a Pre-heated oven at 180ºC (gas mark 4) for approximately 1 hour.

Healthy Nutritional Advice
Added salt is not recommended but if used keep to a minimum . If using oil use unsaturated (olive or sunflower) and reduce the quantity used where possible. This helps to provide a nutritional balanced dish.
