Preparation

Advanced Preparation.
Place a large pan of water on to a high heat and bring to the boil.

Method.

1. Cut the courgette's in to spaghetti by using the small teeth in a mandolin and pass the courgette through length ways. Cut the smoked salmon in to strips.

2. Place the spaghetti in to the boiling water and cook as per manufacturers instructions.

3. In a sauté pan add the oil and bring to a medium to high heat, add the garlic and courgette's and cook gently for 1-2 minutes.

4. Add the cooked pasta and cream cheese and mix well.

5. Serve center of plate in a warmed pasta bowl.

Handy Hint.
If you don't have a mandolin you can cut the courgette in half and then slice thinly. You could also use roasted peppers instead of courgette. Garnish with chopped basil and concasse of tomato.

Healthy Hint.
