Warm the service plates.Pre heat an oven to 180ºC (375ºF) gas 4.
Method
1. Decant the required amount of sauce into a saucepan or jug, add the apricots and kidney beans, cover until required for use. Can be heated in advance if required.
2. Place the chicken quarters in the bottom of a wide casserole. Scatter over carrots. Cover with the tomato sauce.
3. Place the sliced potatoes on top of the tomato sauce and brush with the FLORA.
4. Cook in the pre-heated oven for 40 minutes or until the chicken is thoroughly cooked.
5. Serve the chicken with the sauce poured over, accompanied with a portion, 180g, pasta or rice.
Handy hint
Can be served with crusty bread and salad.
Healthy Hint
Keep added salt to a minimum. Use an unsaturated oil (olive or sunflower) and reduce the quantity used. This helps to provide a healthy balanced dish.
