Wash and remove any grit from the mushrooms. Warm the serving dishes.
Method
1. Place the mushrooms in a dish, season and flavour by mixing in the garlic paste. Cover, label and refrigerate if not required for immediate use.
2. Decant the required amount of sauce into a measuring jug. Cover, label and refrigerate if not required for immediate use.
3. Heat the oil in the wok or frying pan add the mushrooms and onions, stir fry for 1-2 minutes.
4. Add the sherry, bring to the boil and reduce rapidly by half. Add the sauce, bring to the boil and simmer for 1 minute.
5. Serve with a portion of steamed or boiled rice.
Handy hint
Button or flat field mushrooms are ideal alternatives to oyster mushrooms.
Nutrition
Added salt is not recommended but if used keep to a minimum . If using oil use unsaturated (olive or sunflower) and reduce the quantity used where possible. This helps to provide a nutritional balanced dish.
