Preparation
Advance preparation
Trim the lamb of any excess fat. Warm the serving dishes. Chop the onions.
Method
1. Place the lamb in a basin and season and flavour with the garlic paste.
2. Make up the rogan josh sauce by whisking the korma concentrate in the water and placing over a medium heat, bring to the boil and simmer for 5 minutes or until the consistency you require is achieved.
3. In a saute pan add the oil and bring to a medium to high heat, add the cumin seeds, cloves, cardamom pods and bay leaves until all the seeds have popped and crackled. Add the lamb, onions and chilli, cook to a golden brown evenly all over. Cover with a lid and cook in the prepared oven for 90 minutes or until thoroughly cooked and tender. Remove and keep hot.
4. Drain any excess oil & fat and spices from the saute pan, add the prepared sauce, bring to a medium to high heat, simmer for 2-3 minutes.
5. Serve the lamb neatly, centre of plate, with the onions, mask over and drizzle the sauce and drizzle with yoghurt garnish with chopped chillies.
Service Hint
Serve with KNORR rice, KNORR Pataks Mini Poppadoms, Naan Breads and chutney.
Handy Hint
Other meats can be used like leg of lamb, beef chuck or brisket and also belly pork.
Nutrition Hint
Added salt is not recommended but if used keep to a minimum . If using oil use unsaturated (olive or sunflower) and reduce the quantity used where possible. This helps to provide a nutritional balanced dish.
