Coriander Crusted Rack of Lamb with Lentil Ragu (create more)

Preparation
Advance Preparation
Preheat oven to 180ºC (375ºF)/gas 5. Warm the serving plates. Prepare the ingredients as above.
Method
1. Heat 25ml of the oil in a suitable pan over a high heat. Seal the lamb racks all over until lightly golden.
2. Brush 100ml KNORR PATAK’S Create More Rogan Josh Concentrated Sauce onto the top of the racks and then press on 100g of the chopped coriander. Place onto a suitable oven tray and cover, label and refrigerate until required.
3. Heat the remaining oil in a suitable pan over a medium heat. Add the onion, carrot and celery and cook over a medium heat for 5 minutes or until soft. Add the lentils, water and the remaining KNORR PATAK’S Create More Rogan Josh Concentrated Sauce. Stir well and bring to a simmer. Cook until the lentils are tender and the sauce has reduced. Finish with the remaining chopped coriander and keep warm.
4. Place the lamb into the oven and cook to the customer’s requirements. Remove and allow to rest for half of the cooking time.
5. Spoon the lentil ragu centre of plate, top with the carved lamb rack and garnish with a sprig of coriander.
Service Hint
Serve with rice and KNORR PATAK’S Pappadums.
Handy Hint
Lamb can be replaced with chicken, mixed vegetables, prawns or other meat substitutes.
Healthy Nutritional Advice
Added salt is not recommended but if used keep to a minimum. If using oil use unsaturated (olive or sunflower) and reduce the quantity used where possible. This helps to provide a nutritional balanced dish.
