Peppery Chicken Casserole

Preparation
Advanced Preparation.
Warm serving dishes, prepare ingredients as above.
Method.
1. Trim the chicken of excess fat and cut into large pieces, place into a suitable bowl. Add the mixed peppercorn puree and mix well. Cover, label and refrigerate until required.
2. Make up the sauce as per manufacturers instructions.
3. Heat the oil in a suitable pan over a medium heat, add the chicken and cook until golden, remove and keep warm. Add the onions, carrot, celery, parsnips and potatoes, cook for 5 minutes until lightly golden.
4. Add the garlic puree, chicken and sauce, bring to the boil. Reduce to a simmer and cook until chicken is thoroughly cooked.
5. Serve centre of plate garnished with chopped thyme.
Service Hint
Serve with Knorr long grain rice and steamed broccoli.
Handy Hint
Dumplings could be placed on top and baked in the oven instead of cooking on the hob.
Healthy Hint
Added salt is not recommended but if used keep to a minimum . If using oil use unsaturated (olive or sunflower) and reduce the quantity used where possible. This helps to provide a nutritional balanced dish.
