Bulgar Wheat Salad with Feta and Herbs

60gSpring onions chopped
225gTomatoes deseeded and chopped
200gFeta cheese crumbled
350gBulgar wheat
150mlHELLMANN'S Soured Cream Garlic & Herb Dressing 
12gBlack olives stoned and cut into strips

Preparation

Advanced Preparation.
Place the bulgar wheat in a bowl with plenty of boiling water. Stir and leave for 30 minutes, then drain and squeeze out as much water as possible.

Method.

1. Prepare ingredients as per ingredient list.

2. Mix the bulgar wheat, peppers, spring onions, tomatoes half the feta and the dressing in a suitable bowl till every thing is coated.

3. Spoon the salad centre of plate and finish by sprinkling with the remaining feta and the olives.

Handy Hint.
KNORR herb pastes or flavoured bouillons could be used to flavour the bulgar wheat by adding a tbsp to the boiling water when soaking the wheat.

Healthy Hint.
Serve with steamed fish or chicken for a healthy light lunch.
