For the fritters:

To serve:

  • Lime 50 g
  1. For the fritters:

    • Rub the corn with oil then place on to char-grill.
    • Cook for 2 minutes on each side until lighted charred then remove from the grilland allow to cool.
    • Cut the kernels from the cob and place into a large mixing bowl.
    • Drain the jalapenos, dic then add to the bowl.
    • Wash and thinly slice the spring onions and add to the bowl.
    • Wash and chop the coriander and add to the bowl.
    • Beat the eggs and KNORR Professional Garlic Puree together.
    • Add both flours, baking powder and salt to the bowl then zest in the lime.
    • Pour the egg mix into the bowl and mix together to form a batter.
  2. To serve:

    • Pre-heat deep fat fryer to 180c.
    • Carefully drop teaspoons of the mix into the fryer.
    • Cook for 3-4 minutes until golden brown.
    • Remove the fritters from the oil and allow to drain on kitchen paper to remove any excess oil.
    • Cut the lime into wedges and serve.
