Heart of palm ceviche
For the ceviche:
- Finely dice the drained hearts of palm and place into a bowl.
- pour over the lime juice and allow to marinate for 10 minutes.
- Peel and finely dice the red onion and add to the bowl.
- Remove the seeds and skin from the tomato and finely dice and remove the seeds from the chilli and finely dice then place both into the bowl.
- Add the Hellmann's Vegan Mayo and stir through then chop the coriander and add to the bowl.
- Stir together and serve with tortilla chips.
