For the ceviche:

  • Tomatoes 200.0 g

Preparation

  1. For the ceviche:

    • Finely dice the drained hearts of palm and place into a bowl.
    • pour over the lime juice and allow to marinate for 10 minutes.
    • Peel and finely dice the red onion and add to the bowl.
    • Remove the seeds and skin from the tomato and finely dice and remove the seeds from the chilli and finely dice then place both into the bowl.
    • Add the Hellmann's Vegan Mayo and stir through then chop the coriander and add to the bowl.
    • Stir together and serve with tortilla chips.
    *note, make this just before serving so the lime just doesn't change the texture too much.
