For the Brownie:

  • Butter 185 g
  • Brown sugar 185 g
  • Dark chocolate 300 g
  • Egg(3 in number) 150 g
  • Vanilla paste 2.5 g
  • Plain flour 185 g
  • Baking powder 1.25 g

For the Garnish:

  • Blueberriesfrozen 200 g
  • White chocolatebaking chunks 100 g
  1. For the Brownie:

    • Place the Butter and brown sugar in a pan and melt, stirring to ensure it does not burn.
    • When melted, remove from the heat and stir in the dark chocolate and allow to cool to body temperature.
    • Whisk the eggs and vanilla paste in a separate pan and then fold in to the chocolate mix.
    • Sift the flour and baking powder and fold into the mixture, Pour into a greased and lined large rectangle tin.
  2. For the Garnish:

    • Break the white chocolate into pieces and evenly scatter then into the brownie mix.
    • Then spoon the blueberries over the top and stir the brownie mixture.
  3. To Bake:

    • Place into the oven and bake for 30-35 min. or until the mixture is just cooked in the centre,
    • Remove from the oven and place onto a cooling rack and allow to cool in the tin.
    • Once cooled cut into portions and serve.
